Winter is coming! Get your AGA on!

With September on the horizon and the air heavy with the first signs of a cold snap, we have arrived at the point of the year in which we have to begrudgingly accept that summer is a thing of the past. If this is the first you’ve heard of it then we do apologise, but you heard us right, time to mothball the flip-flops and sunhats and take the fleeces out of storage.

Don’t be too disappointed though, as winter is the best time of the year for enjoying some incredible food from your AGA or range cooker. Pies, roasts, casseroles and much, much more are the reward for dragging yourself to and fro from work in the rain, wind and snow that the wonderful British winter brings.

As premier suppliers of Aga servicing in Devon we are suckers for a good casserole and love nothing more than cracking the frosted seal on the front door to be met by the smell of the ultimate one-pot meal gently cooking in the AGA. If you are the proud owner of an AGA or range cooker and are yet to put it to the casserole test, then you’ll want to make sure that you try the recipe below;

What you will need

  • olive oil
  • 2 medium red onions, chopped chunky
  • 2 carrots, sliced
  • 1 stick of celery, sliced
  • 200 g chorizo, chopped chunky
  • 4 chicken thighs
  • 1 litre of good quality chicken stock
  • ½  teaspoon of cayenne pepper
  • A little thyme
  • Crusty bread for serving

How to do it

Step 1

First step is to get some colour on those thighs (no, not yours, it’s winter remember); place them in a hot frying pan with a small amount of olive oil. Turn them regularly until they have a nice golden-brown colour on the outside. Once these are browned place them in the casserole dish and replace them in the frying pan with the chorizo, which is coloured and added to the pan in the same way as the chicken.

Step 2

Now pay close attention as step two is very difficult… add everything else to the casserole dish and bung it in a preheated AGA or range cooker at around 160°c.

Step 3

Step three is almost as hard as step 2 and needs lots of care and attention… no we’re joking again you just need to keep checking it every 30 minutes or so. If at any point it looks a little dry then help it out with a little water or stock.  After a few hours on this low heat the casserole will be unctuous and the heat from the chorizo and cayenne make it a wonderful warming treat.
